Energy is not infinite; using it sparingly is one of our core principles. That’s why, years ago, we decided to install the distillery and brewery on the same site. In the distillery, we produce a lot of hot water during distillation, specifically for cooling the alcohol vapors. We can perfectly recover this cooling water for re-mashing the whisky or brewing the lambic.

But even more important is the heat recovery from the energy contained in that water.

With the residual heat, we can also heat our taproom and main hall. And we’ll still have some left over… which will go to the malt house in the future to kiln the malt.

This way, we can obtain up to 93% of the energy needed for the malt house simply through recovery.

We largely obtain all the electricity we need from our solar panels. We can therefore proudly say that we can brew almost energy-neutral beer.

And of course, we strive to combine short supply chains and organic practices.

Our bottle, made from 100% recycled bottles!

Every bottle that leaves the farm is also bottled on the farm. We didn’t just choose any bottle. Our bottle is made in Europe from 100% recycled bottles. It’s the first time they’ve succeeded in producing a bottle without adding any new glass. This has resulted in beautiful imperfections, just like with our distillates, where nature plays the most important role in the entire process.

From the soil where the raw materials grow to the box containing the bottles and every step in between… that’s the quality we guarantee.

Short Chain or De Cort Chain?

As a farm in the beautiful Pajottenland, Brussels’ garden, we have every opportunity to grow almost all our raw materials right here. Barley, wheat, but also apples or potatoes… as the largest contiguous agricultural area in Flanders, we have it all.

A short chain means the raw material can arrive by tractor instead of by truck. Straight from the field, into the bottle. The purest flavors of our region.
