Making a true Belgian vodka… few embark on that journey. Why? Because almost all vodka is simply made from neutral, industrially distilled alcohol at 96% and then diluted with water to 40%. And that’s simply so cheap that an alternative is unthinkable. That’s not how we thought about it.

This is how we make... the difference

Local grain? Yes, of course!

Why wouldn’t we use local grain for our vodka? Truly short chain. As the ‘court of Brussels,’ we have been cultivating grains in the Pajottenland for centuries, for bread, beer, animal feed,… and that self-sufficiency truly fascinates us as a distillery. Can we, or local farmers, grow wheat, barley, and rye for distillation? Yes, of course! And so, we got to work.

Most of the fields where our grains are grown are less than 5 km from the distillery. Our motto there is: ‘If it can be delivered by tractor, it’s a short chain; once we need a truck, it’s actually coming from too far away.’ These fields are either organic or in organic conversion. The intention is to also switch our vodka to 100% organic.

By not distilling to a neutral alcohol of 96%, we still find that touch of the raw material in the final distillate. These pure flavors make each batch unique.

Purest taste of the Pajottenland

To distill vodka, we first mill, mash, and ferment the grain, just as we brew beer. This yields a kind of undrinkable grain beer.
After fermentation, which takes about 4 days, we distill the mash for the first time in our large 5000L Holstein copper still. The result is a raw distillate of approximately 60% alcohol. This raw distillate is then distilled one or more times in our small Holstein still to a distillate of ±94% alcohol.
This is possible because we, perhaps even as the only Belgian distillery, have a copper rectification column, allowing us to distill up to 96%. 96% is what we call neutral alcohol, without scent or taste, the base of all commercial vodkas.

So, vodka with flavor...

But we don’t go that high in alcohol. Why would we? If we put in all the effort to work with local grains, to mill, mash, ferment, and distill multiple times, only to ultimately obtain a distillate without scent or taste? No, for our vodka, we don’t go higher than 94% alcohol during the final distillation. This ensures a unique, full flavor where you can still taste the grain.
By working with true copper stills, we obtain an extremely smooth vodka because copper removes many undesirable flavors from the alcohol.
This way, and only this way, do we achieve that pure, smooth, and flavorful TRUE Belgian vodka. The purest taste of the Pajottenland.

Every bottle that leaves the farm is also bottled on the farm. We didn’t just choose any bottle. Our bottle is made in Europe from 100% recycled bottles. It’s the first time they’ve succeeded in producing a bottle without adding any new glass. This has resulted in beautiful imperfections, just like with our distillates, where nature plays the most important role in the entire process.
