We distill our award-winning London Dry Organic Gin using alcohol from organic grains and 16 organic botanicals.

Besides juniper, coriander, and cardamom, zests of bitter and sweet orange, lemon, lemongrass, and verbena create a rich, full, and smooth citrus gin. We only use real botanicals and distill all of them together.

Every drop in the bottle has passed through all the botanicals together and the still. And because we do this via vapor infusion, it’s even smoother and richer in flavors.

Since 2013, we dreamed of distilling our own gin. We could have made it very easy for ourselves by buying some alcohol and aromas, mixing them well, bringing it back to 40% alcohol, bottling it in a nice bottle, putting a nice label on it, and voilà… a nice story. But that’s just a story, and it remains just a story. So, we didn’t do that…

This is how we make... the difference

Only real botanicals, 100% distilled!

Gin is about botanicals, and in our case, many botanicals, and real botanicals. Only carefully selected fresh and dried botanicals. While we try to source the basic raw materials for our alcohol, which we need in very large quantities, as much as possible from local chains, it’s different when it comes to botanicals. For these, we travel the world. Our juniper berries, for example, the most important botanical in our gin, come from Macedonia. Why? Simply because we believe they are the best. The same goes for lemons from Italy, oranges from Spain, and Sichuan pepper from China… Fortunately, these quantities are so small that we can live with the ecological impact. Of course, we would also like to grow all the botanicals ourselves, and we do so for a part, for example, in our London Bus. A converted double-decker bus that serves as a greenhouse… Sofie’s favorite spot at our distillery. Here she completely relaxes among the earth and the scents of the fresh botanicals.

Real botanicals have deeper flavors. The gins are also fuller and smoother because by using real botanicals, we also have to fully distill the gin through our copper stills. And copper, that softens the alcohol.

Both selecting, grinding, and peeling are manual work. We have a machine to peel orange zests, but the result is not the same; the machine peels too much of the white pith from the orange, which leads to a too bitter taste. Only by hand can you perfectly see how thick or thin you should or can peel an orange. Yes, that’s what we call handcrafted… we absolutely love that.

Not 'premium gin', this is London Dry Gin!

We don’t make ‘Premium Gin’. Period. Let me explain. Most gins on the market are simply industrial alcohol with some aromas added, bottled in a nice bottle, and off to the market. Premium gins do work with botanicals but make a separate distillate from each botanical and then add a few percent to industrial alcohol. Which means that perhaps only 4 to 5% of the gin has actually passed through the botanicals – wow, let’s call that premium then. London Dry is different! Only real botanicals, all botanicals together, and every drop of alcohol has passed through all the botanicals.

In our artisanal distillery, we therefore only use real botanicals, never aromas. We use all botanicals together in our still, and every drop of alcohol passes through all the botanicals. This results in much fuller flavors. And that’s how we are allowed to carry the ‘London Dry’ label.

 

VAPOR INFUSION? THE POWER OF VAPOR

It seems simple. I compare it to making tea. If you make tea with boiling water, you are ‘burning’ part of the botanicals, especially delicate botanicals like lemon verbena, which suffer from that.

It’s exactly the same with distilling. If the botanicals are in the pot still, the temperature during distillation can reach up to 90-92°C. By placing the botanicals in a separate botanical basket, we let the alcohol vapors pass through them, and alcohol vapor is 78°C.

So much smoother and especially fuller. You have to imagine that the alcohol vapor passes through the botanicals, carries the flavor, and then condenses back into liquid. The flavor is then truly in that gin.

That is what Vapor Infusion contributes to our constant pursuit of perfection.

And then 100% organic!

Only organic goes into the baskets: fresh zests and dried botanicals. Even the placement of the botanicals influences the taste of the gin.

Not only London Dry, Vapor Infused, but also organic… Yes, of course, the grains from which the alcohol is distilled are organic, but all botanicals must also be organic, precisely because we work with real botanicals and not with aromas.

Does that make a big difference in flavors? We find organic botanicals to be more intense in flavor. Moreover, they are also more natural. And not unimportantly, it doesn’t make the final product much more expensive. A negligible price difference in production but a difference in your bottle. That’s what truly makes it worthwhile.

So London Dry AND organic, there really aren’t many like that on the market. It requires more craftsmanship, more control over the raw materials, and more patience. And of course, not every batch is exactly the same; that’s precisely what makes it so natural. Not every harvest of botanicals is exactly the same, not every orange is exactly the same… that’s what makes it so fascinating.

100% recycled bottles

Every bottle that leaves the farm is also bottled at the farm. We didn’t just choose any bottle. Our bottle is made in Europe from 100% recycled bottles. It’s the first time they have succeeded in producing a bottle to which no new glass was added. This has resulted in beautiful imperfections, just like with our distillates, where nature plays the most important role in the entire process.

From the soil where the raw materials grow to the box containing the bottles and every step in between… that’s the quality we guarantee.
