Distilling beer, isn’t that the basis of whisky? Yes, but there’s also a big difference.
The essence of lambic...
Lambic is one of the oldest beers in the world and is, of course, very specific to our region, the Pajottenland and the Zenne valley. Because in our region there are wild yeasts in the air that really make lambic. That spontaneous fermentation on wooden barrels is long, very long. As a result, we get esters and flavors that make lambic unique, unique in the world. And we are going to literally condense those flavors to the essence by distilling it.

Distilling lambic is a challenge because every batch is really different. But the flavors are so unique due to the long fermentation that we as a small distillery certainly had to try this in 2020. We have been able to monitor the evolution in the sherry casks for 5 years and it promised to be something unique. The fact that we need 10 liters of lambic for one bottle does not make it our cheapest bottle, but perhaps the most unique. This simply does not exist in the world.
