Distilled from Pajot grapes on our hybrid Holstein stills into a fine, smooth, and fruity spirit. Afterwards, aged for five years in Moscatel casks. Very limited edition of only 614 bottles.

A Very Superior Old Pale that, in our opinion, certainly deserves that label. But taste and judge for yourself.

Distilling wine? It was pretty much the beginning of distillation. The wine was heated and the vapors condensed back into spirit… they called it ‘brandewijn’, brandy… And as a traditional distillery, that was a spirit we certainly couldn’t miss out on.

This is how we make... the difference

Local grapes, local vineyards

We have a lot of fruit like apples and pears on our farm, and with those apples and pears, we’ve been making eaux-de-vie, gins, brandy, cider since our inception… But we don’t have grapes, nor do we make wine. So we had to approach local winemakers to buy wine and grapes. Really delicious wines are produced in the Pajottenland, but not in large quantities. So we knew from the start that if we wanted to make a brandy, it would always be a very limited edition. No worries, we are not a distillery where volume is important, but rather the flavors, the local character, and traditional craftsmanship.

And so, in 2019 and 2020, we started distilling various wines. Marketing it as an eau-de-vie was an option, but we found aging it for years in oak casks to be a better choice. Not for the yield, because in our old cask warehouse, it sometimes got so warm that we lost a lot to the angel’s share. That heat also led to a much faster maturation of the spirit. You gain some time but lose in quantity. In the Pajottenland, there’s an expression for it: ‘You can’t have everything, fat cows and long grass.’

In the world of brandy, there are many proponents but even more opponents. The often old stills give too many off-flavors and produce a spirit that truly 'burns', hence the name perhaps. That shouldn't be the case; a spirit should never really burn, or at least not if it's truly well-distilled.

We distill the wine on our hybrid Holstein stills. The pot still provides character, the column provides finesse and purity.

MOSCATEL CASKS

We collaborate with a cooperage (where they make our casks) in Southern Spain, and there we had the opportunity to acquire old Moscatel casks. Just the aroma was enough to convince us… this is where we’ll let our brandy spirit rest.

Three unique casks, indeed, we only have three of them, but no worries, as mentioned, quality comes first.
Because we aged the brandy for more than four years, we are allowed to affix the V.S.O.P. label to it. It stands for Very Superior Old Pale, and that ‘very superior’ is truly not a marketing term in the case of our brandy. Be sure to come and taste it and enjoy this piece of history and our Pajottenland.

100% recycled bottles

Every bottle that leaves the farm is also bottled on the farm. We didn’t just choose any bottle. Our bottle is made in Europe from 100% recycled bottles. It’s the first time they’ve succeeded in producing a bottle without adding any new glass. This has resulted in beautiful imperfections, just like with our distillates, where nature plays the most important role in the entire process.
