Making pastis? Why would we do that? We admit, it’s not really a logical choice for a warm distillery, and it was never the direct intention until we ‘had to’. The story of our pastis begins in 2017 when we were invited to a local festival with our gin truck. A few months before the festival, the question suddenly arose if we could also serve pastis from our bar during the pétanque tournament. To our answer of ‘we don’t make pastis,’ the suggestion came: ‘buy some bottles of an unnamed commercial brand’. Well, as a distiller, serving something you don’t stand behind is difficult. So, we still had plenty of time before the festival… We decided to make our own pastis.

Anethole? No thanks!

An additional problem: I don’t find pastis that great, or rather, commercial pastis. It’s not that I don’t like anise, but I especially have a problem with anethole, the anise oil. An oil that is added to almost all well-known brands to give enough anise flavor to the pastis. Strong in flavor, cheap to produce, but it feels very ‘off’ when you drink it. So we decided to make it without anethole.

To replace anethole, we began a search for alternatives and arrived at a separate distillation of star anise, black cardamom, and black pepper. So, one part is a maceration and filtering of herbs, another part is the distillation.

By not using anethole, our pastis also turns much less milky when you add water. This is because oil dissolves in alcohol but not in water.

Pastis is a typical French product and a descendant of absinthe. When they were no longer allowed to use wormwood to make absinthe, the drink was simply named pastis. In the Provençal dialect, it is said to mean 'mixture'.

Real herbs & organic!

And of course, our pastis is more than just anise. It goes without saying that aniseed, fennel seed, and star anise are the main players, but you also taste the warmth of mace and cinnamon, the extra kick from coriander and cloves, and then there’s caraway seed and licorice… This, combined with the distillation of black pepper and black cardamom, makes our pastis one you can enjoy both neat and diluted with water.

So yes, you can also drink it neat. Feel free to try it and discover its smoothness, despite the 48% alcohol. But 48% is definitely there, so be careful, it’s a bit deceptive.

MUCH SOFTER FLAVORS AND FULLER AROMAS

Naturally, we only use real herbs for our pastis, and on top of that, only organic ones. The alcohol itself comes from organically grown grains. Real herbs provide much softer and fuller flavors than artificial aromas. Moreover, artificial flavors tend to create more chemical and volatile substances that irritate, whereas real herbs taste much more natural.

So much more than just mixing with water

Our pastis can be drunk neat, with ice, with water, but it’s also wonderfully delicious in many cocktails. Try it with tonic, or with half ginger beer and tonic. Or with ginger and orange juice. It’s also perfect in a Vieux Carré cocktail with brandy, vermouth, and our Blond beer brandy. Or as an extra flavor experience in dishes. So many possibilities with one spirit.

100% recycled bottles

Every bottle that leaves the farm is also bottled on the farm. We didn’t just choose any bottle. Our bottle is made in Europe from 100% recycled bottles. It’s the first time they’ve succeeded in producing a bottle without adding any new glass. This has resulted in beautiful imperfections, just like with our distillates, where nature plays the most important role in the entire process.
