Just like whisky, this beer brandy starts from beer. It’s the result of our search for top Belgian strong blonde beers, which we distill in our copper Holstein stills into a soft, rich spirit and age for at least 5 years in (first-fill) ex-bourbon barrels. A smooth, fruity spirit that you can enjoy neat or in cocktails.

Belgium is a beer country. What Belgian brewers achieve is impressive, truly impressive. And what we can make from that afterwards is – literally speaking – even more impressive.

Distilling beer, isn’t that the basis of whisky? Yes, but there’s also a big difference.

This is how we make... the difference

Strong Belgian beers…

When we make whisky, we first brew an ‘undrinkable’ beer. The brewing process is similar, but there are also some major differences. It starts with the barley grain and milling. For our beers, we want to filter after mashing, which is why we don’t mill the grain too finely, to achieve a natural filter bed. We don’t do that for our whisky. We mill much finer to maximize yield and bring out more of the malt flavor. We don’t filter that, but distill on the grain. Furthermore, for whisky, we don’t boil or add hops for preservation; we distill that wort relatively quickly anyway. And during mashing, we also don’t consider proteins for foam stability and beer body.

This way, we get a kind of ‘undrinkable’ beer, ready to be distilled into a great single malt whisky.

That’s also the big difference with distilled beers. The base is perfectly drinkable beers that we distill.

We usually start with a strong Tripel of around 8.5% ABV and distill it up to twice in our copper Holstein stills. The resulting spirit is purer, smoother, and more refined, and still links back to the original beer.

This also makes it spicier than what we obtain as new make for whisky.

Cask aging… at least 5 years!

Although the distillate could perfectly be bottled as clear ‘eau-de-bière’, we age it for at least 5 years in first-fill Bourbon barrels. These are barrels from American Bourbon whisky that have only been used once for Bourbon. This way, our spirit still acquires that typical taste of honey and vanilla, just like Bourbon.

EVERY CASK IS DIFFERENT…

While an ex-Bourbon barrel is a great barrel for aging, we also love to experiment with other barrels in our barrel warehouse. Especially sherry, PX, and Oloroso, but also cognac, moscatel, and even port barrels, filled with wonderfully distilled beers, are waiting to be bottled.

Our small scale and independence give us the opportunity to experiment a lot. We don’t aim for high volume; our ambition is to surprise you, the consumer. Today, tomorrow, and hopefully for many years to come, as there’s still a lot aging.

Not only Belgian Tripel is interesting to distill, but most other beers are too. Soon, we’ll be launching our ‘Dark’, a distilled dark Tripel, and our ‘Black’, a distilled Russian Imperial Stout. We aged these for 6 years in old cognac barrels.

Another true regional showpiece is our ‘Wild’ edition. We start with 3-year-old Lambic, distill it into a beautiful eau-de-bière, and let it age for 5 years in PX and Oloroso sherry barrels. 100% recycled bottles

Every bottle that leaves the farm is also bottled on the farm. We didn’t just choose any bottle. Our bottle is made in Europe from 100% recycled bottles. It’s the first time they’ve succeeded in producing a bottle without adding any new glass. This has resulted in beautiful imperfections, just like with our distillates, where nature plays the most important role in the entire process.

From the soil where the raw materials grow to the box containing the bottles and every step in between… that’s the quality we guarantee.
