Also mussten wir uns an lokale Winzer wenden, um Wein und Trauben zu kaufen. Im Pajottenland werden wirklich leckere Weine produziert, aber nicht wirklich viele. Also wussten wir von Anfang an, dass, wenn wir einen Brandy machen wollten, es immer eine sehr begrenzte Auflage sein w\u00fcrde. Keine Sorge, wir sind keine Brennerei, bei der Volumen wichtig ist, sondern die Aromen, der lokale Charakter und das traditionelle Handwerk.[\/vc_column_text][vc_column_text css=““ text_direction=“default“]Und so begannen wir in 2019 und 2020 mit dem Destillieren verschiedener Weine. Auf den Markt bringen als Eau-de-vie war eine Option, aber jahrelanges Reifen in Eichenf\u00e4ssern fanden wir eine bessere Wahl. Nicht f\u00fcr den Ertrag, denn in unserem alten Fasslager wurde es manchmal so warm, dass wir sehr viel mit den Engeln geteilt haben. Diese W\u00e4rme sorgte auch f\u00fcr eine viel schnellere Reifung des Geistes. Man gewinnt etwas an Zeit, verliert aber an Menge. Wir arbeiten mit einer K\u00fcferei (wo sie unsere F\u00e4sser herstellen) in S\u00fcdspanien zusammen, und dort hatten wir die M\u00f6glichkeit, alte Moscatel-F\u00e4sser zu erwerben. Allein die Nase reichte aus, um uns zu \u00fcberzeugen… hier werden wir unseren Brandy-Geist ruhen lassen. <\/p>\n<\/div>\n

Da wir den Brandy mehr als vier Jahre reifen lie\u00dfen, d\u00fcrfen wir das Label V.S.O.P. darauf kleben. Es steht f\u00fcr Very Superior Old Pale, und dieses Very Superior ist wirklich kein Marketingbegriff im Fall unseres Brandys. Jede Flasche, die vom Hof kommt, ist auch auf dem Hof abgef\u00fcllt. Wir haben uns nicht f\u00fcr irgendeine Flasche entschieden. Unsere Flasche wird in Europa aus 100 % recycelten Flaschen hergestellt. Es ist das erste Mal, dass es gelungen ist, eine Flasche zu produzieren, der kein neues Glas hinzugef\u00fcgt wurde. Dadurch sind wundersch\u00f6ne Imperfektionen entstanden, genau wie bei unseren Destillaten, wo die Natur die wichtigste Rolle im gesamten Prozess spielt. <\/p>\n
