Auf unsere Antwort ‚wir machen keinen Pastis‘ kam der Vorschlag ‚kauft ein paar Flaschen einer nicht n\u00e4her genannten kommerziellen Marke‘. Tja, als Destillateur etwas ausschenken, hinter dem man nicht steht, schwierig. Zus\u00e4tzliches Problem, ich finde Pastis nicht so toll, oder besser gesagt, den kommerziellen Pastis. Nicht, dass ich Anis nicht mag, aber ich habe vor allem ein Problem mit Anethol, dem Anis\u00f6l. Ein \u00d6l, das in fast allen bekannten Marken zugesetzt wird, um dem Pastis gen\u00fcgend Anisgeschmack zu verleihen. Stark im Geschmack, billig in der Produktion, aber es ‚wringt‘ doch sehr stark, wenn man es trinkt. Also w\u00fcrden wir das ohne Anethol herstellen. <\/p>\n

Um dieses Anethol zu ersetzen, begann eine Suche nach Alternativen und wir kamen auf eine separate Destillation von Sternanis, schwarzem Kardamom und schwarzem Pfeffer. Ein Teil ist also eine Mazeration und Filterung von Kr\u00e4utern, ein anderer Teil ist die Destillation. <\/p>\n

Dadurch, dass wir kein Anethol verwenden, f\u00e4rbt sich unser Pastis auch viel weniger milchig, wenn man Wasser zugibt. Wir verwenden nat\u00fcrlich nur echte Kr\u00e4uter f\u00fcr unseren Pastis und dar\u00fcber hinaus auch noch ausschlie\u00dflich Bio. Der Alkohol selbst stammt von biologisch angebautem Getreide. Echte Kr\u00e4uter geben viel weichere und vollere Geschm\u00e4cker als k\u00fcnstliche Aromen. Jede Flasche, die vom Hof kommt, ist auch auf dem Hof abgef\u00fcllt. Wir haben uns nicht f\u00fcr irgendeine Flasche entschieden. Unsere Flasche wird in Europa aus 100 % recycelten Flaschen hergestellt. Es ist das erste Mal, dass es gelungen ist, eine Flasche zu produzieren, der kein neues Glas hinzugef\u00fcgt wurde. Dadurch sind wundersch\u00f6ne Imperfektionen entstanden, genau wie bei unseren Destillaten, wo die Natur die wichtigste Rolle im gesamten Prozess spielt. <\/p>\n
