Warum sollten wir kein lokales Getreide f\u00fcr unseren Wodka verwenden? Echt kurze Kette. Als \u201aHof von Br\u00fcssel\u2018 bauen wir im Pajottenland schon seit Jahrhunderten Getreide an, f\u00fcr Brot, Bier, Tierfutter, \u2026 und gerade diese Selbstversorgung reizt uns als Brennerei. K\u00f6nnen wir selbst oder mit lokalen Bauern Weizen, Gerste und Roggen zum Destillieren anbauen? Ja, nat\u00fcrlich! Um Wodka zu destillieren, werden wir das Getreide, genau wie beim Bierbrauen, zuerst mahlen, einmaischen und verg\u00e4ren lassen. So erhalten wir eine Art untrinkbares Getreidebier. <\/div>\n
Nach der G\u00e4rung, die etwa 4 Tage dauert, werden wir diese Maische zum ersten Mal in unserer gro\u00dfen 5000-Liter-Holstein-Kupferbrennblase destillieren. Das Ergebnis ist ein Rohbrand von etwa 60 % Alkohol. Dieser Rohbrand wird dann noch ein- oder mehrmals in unserer kleinen Holstein-Brennblase zu einem Destillat von \u00b1 94 % Alkohol destilliert. <\/div>\n

Aber so hoch im Alkohol gehen wir also nicht. Warum sollten wir? Wenn wir uns alle M\u00fche geben, mit lokalen Getreidesorten zu arbeiten, zu mahlen, einzumaischen, zu verg\u00e4ren, mehrmals zu destillieren, um schlie\u00dflich ein Destillat ohne Geruch oder Geschmack zu erhalten? Nein, wir gehen f\u00fcr unseren Wodka nicht h\u00f6her als 94 % Alkohol w\u00e4hrend der letzten Destillation. Jede Flasche, die vom Hof kommt, ist auch auf dem Hof abgef\u00fcllt. Wir haben uns nicht f\u00fcr irgendeine Flasche entschieden. Unsere Flasche wird in Europa aus 100 % recycelten Flaschen hergestellt. Es ist das erste Mal, dass es gelungen ist, eine Flasche zu produzieren, der kein neues Glas hinzugef\u00fcgt wurde. Dadurch sind wundersch\u00f6ne Imperfektionen entstanden, genau wie bei unseren Destillaten, wo die Natur die wichtigste Rolle im gesamten Prozess spielt. <\/p>\n
